Ingredients:
6 large chicken breasts
2 small cans or 1 lg. can cream of chicken soup
1 small can cream of celery soup
1 small can cream of mushroom soup
1/2 cup diced celery
2 cup Minute Rice
2 cups of frozen broccoli
Salt and pepper, and any other seasoning you like. We like Mrs. Dash
Directions:
1. Mix in crock pot the soups, seasonings, and rice. Place chicken on top of mixture, then sprinkle diced celery over chicken.(I add a little more seasoning on top of the chicken)
2. Cook on low for 5 hours. (When there is about 1 1/2 hours left I add the frozen broccoli on top of the chicken)

Chile Relleno Casserole
1 lb ground sausage, cooked
1 dozen eggs
1 can cream soup (mushroom or chicken)
1 can milk (from soup)
1 can black olives, sliced (optional)
1 can green chilies, drained
1 cup mozzarella cheese, grated
Preheat oven to 350 degrees.
Spray 9 x 13 pan with non-stick cooking spray.
In separate mixing bowl, whisk together 12 eggs.
Add 1 can cream soup & 1 can milk, mix well.
Stir in chilies.
Place cooked sausage on bottom of 9 x 13 pan.
Place olives in pan...if desired.
Pour egg mixture over sausage.
Cook in oven approximately 50-60 minutes or until center is almost set. Add grated cheese over top the last 5-10 minutes. Test with toothpick to be sure eggs are cooked completely.

Baked Potato
So, you don't really need a recipe for this...but it's so cool!
Scrub enough potatoes to fill your crock pot.
Poke holes in them and wrap them in foil.
(the foil may not be necessary, experiment)
Cook on LOW all day or HIGH all afternoon.
Serve however you like them...
Taco toppings, Fajita toppings...or go with the reliable cheese, sour cream and bacon bits.
*So many potatoes and slow cooking them made them taste so yummy. I think I figured out why restaurant baked potatoes taste so good, I think they slow cook them like this! This pleased EVERYONE in my family.

Yummy Fried Potatoes

This is a recipe that I just made up myself. You can change it to your liking.
8 medium potatoes
Small yellow onion
1 medium green bell pepper
1 small red bell pepper
Mrs. Dash
Salt and Pepper
4 Tblsp. butter or margarine
Skin and wash the potatoes (I don't take all the skin off)
Slice potatoes and put in skillet
Chop yellow onion and bell peppers and add to the potatoes, and mix together.
Add your butter, or margarine, salt and pepper, and Mrs. Dash (You can use whatever spices you like here)
Let them cook in the skillet on medium heat til potatoes are tender.
My family really enjoyed these. They were easy to prepare and can be served with just about anything!!
