Cake Cookies

This is a simple and way easy peasy recipe!!!!

All you need is a cake mix of your choice, 2 eggs, and 1/2 cup of cooking oil.  That's it!!!! You put the cake mix in a bowl, add your two eggs, and 1/2c. cooking oil and mix. (DO NOT add anything else that the cake box calls for)  If you want to get creative you can add things like chocolate chips, chopped nuts, raisins, craisins, or mini M&M's (just to name a few)
You bake these on 350* for about 8~10 mins. (Ovens may cook a bit different) Makes about 2~3 dozen

Steak Fajitas!!!

This recipe was so simple to follow.  I had it in my recipe box and have NO clue where I got it from. It's really yummy!!
 
First you get a steak and slice it up into thin strips. Start sauteing this in an electric frying pan, with a bit of vegetable oil and meat tenderizer.
1 lg. yellow onion sliced
1 lg. purple onion sliced
2 lg. bell peppers (I used one red and one green)
When the steak is almost done add all other ingredients and cook together til veggies are slightly tender. (don't over cook the veggies or they will be mushy)  While that is cooking heat up some flour tortilla shells in the microwave so they are warm and ready when the fajita mix is done. Put a spoonful or two of the mixture in the tortilla shell and sprinkle a bit of cheese on top and roll it up!!! This was a big hit at our house.  

*My kids like it with ranch dressing inside of it and my hubby liked it with salsa in it. The possibilities are endless!!!! ENJOY!!

Chile Relleno Casserole

1 lb ground sausage, cooked
1 dozen eggs
1 can cream soup (mushroom or chicken)
1 can milk (from soup)
1 can black olives, sliced (optional)
1 can green chilies, drained
1 cup mozzarella cheese, grated

Preheat oven to 350 degrees.
Spray 9 x 13 pan with non-stick cooking spray.
In separate mixing bowl, whisk together 12 eggs.
Add 1 can cream soup & 1 can milk, mix well.
Stir in chilies.
Place cooked sausage on bottom of 9 x 13 pan.
Place olives in pan...if desired.
Pour egg mixture over sausage.

Cook in oven approximately 50-60 minutes or until center is almost set. Add grated cheese over top the last 5-10 minutes. Test with toothpick to be sure eggs are cooked completely.

Pork Tacos

1 pork roast
1 bottle green salsa
tortillas
favorite taco toppings

Place pork roast in crock pot.
Pour salsa over top.
Cook on low approx 6-8 hours or until tender.
Shred pork.
Enjoy in tortillas with your favorite toppings!
